Day 30 - How Slow Can You Go?

So often we look past the most fundamental of changes to our diet. Instead we go for big, radical changes that are often not necessary. If you recall from earlier lessons, I spoke often of the anxiety we carry around with us when we eat. The speed at which we eat is also vitally important. Slowing down can make all the difference when it comes to allergies and cravings. Believe it or not, when we take time to savor our food and drink, many foods we thought we couldn’t live without suddenly become disgusting. Many allergies also disappeared as many allergies are due to food particles not being adequately digested and therefore the proteins permeating the gut wall. In today’s video, I go into more detail on the strategies you can use to slow down at mealtime.

As you move forward in tailoring your diet to your own needs, always remember to slow down and listen to what your body is actually asking for. Sometimes you may feel that it wants cake and sugar. However, remember that we have mostly been programmed to want that. Despite what some “experts” say, super-sweet foods are not what our bodies want intuitively. Our bodies want to feel well first and foremost, but listening to what others are telling you is the “right diet” only satisfies their egos, not your body. The one thing we do know however is that our bodies have been programmed to eat a wide variety of foods from a variety of sources and although a paleo, vegetarian or even GAPS diet may feel good to you now, it may need updating in the future. It is always good to leave a door open to allow your body to adapt to the many foods nature has provided.

This is why the wisdom of the ancients is so important to keep in mind. As in the yin-yang symbol, we must remember that where there is dark, bits of light peek in. And where there is light, there are also places where dark appear. Life is always in flux and the ability to adapt to its changes is important to our overall health for the long term.

Day 29 - How Should I Feed My Kids?

One of the biggest myths going around is that children prefer different foods from adults. This belief has gotten us into hot water with allergies and autism rapidly rising across the industrialized world. Go to any La Leche League or Holistic Moms meeting and you’ll witness many patterns across children who suffer from such afflictions. What you are eating during the Challenge is in fact perfect for feeding your children as well. Don’t be surprised if you find their overall health, immunity and behavior to change for the better while eating along with you. Check out details in the video.

If your kids started out like most kids in the West, they have a penchant for sweet not-foods. Don’t dispair! Kids are often much easier than adults to switch over to a new way of eating — especially if they know it’s good for them. Here’s what you do:

1. Get them in the kitchen. Kids love science and to see how things are made. Have them chop, slice and mix according to age and capability. This will pay off when they are older and need to fend for themselves.

2. Stop focusing on reducing fat and calories. Kids need nutrients to grow and maintain their mental and physical health. Cook for flavor and nutrition first. The rest comes naturally.

3. Make real food fun. Just because you’re serving leg of lamb doesn’t mean that dinner can’t be more fun than a pizza (which coincidentally could be made healthy very easily). Here’s an idea. Have an Arabian nights party and serve sides of hummus, cucumber salad and pita bread. Then watch a cool kids movie like Aladdin. Believe me. It works!

Day 28 - You Can Have Grains, If You Eat Them Like This

Grains are getting a bad rap these days. While it is true that a staggering number of people are suddenly proving to be gluten intolerant, it is also true that this is largely a man made health problem only worsened by the practice of simply avoiding grains instead of working on resolving the underlying issue. Today’s video focuses on what you can do differently to consume grains and other foods in the best possible way to boost digestion and nutrient assimilation…. and perhaps most importantly, avoid allergies, intolerances and sensitivities.

As mentioned in the videos, raw meats are incredibly easy to digest and for many people seem to unlock a missing link in their digestive woes. Here is my recipe for gravlax, a raw salmon dish from Scandinavia. Enjoy it the way it is prepared in the video for a quick and satisfying meal.

GRAVLAX

2 lbs wild salmon fillets, preferably skinned and sliced in half

3 Tablespoons Celtic sea salt

2 Tablespoons rapadura sugar

1 bunch dill, fresh

cognac or aquavit to sprinkle (optional)

Make sure that salmon fillets are free of scales. Mix salt and sugar. Coat salmon in salt mixture. Sprinkle each side with a tiny amount of optional cognac or aquavit. Place dill over one slice of the fish, then place the other slice of fish on top. Wrap tightly in parchment paper or plastic wrap. Place in the refrigerator for 48 hours, turning once. To serve, slice thinly. Serve with fresh lemon and butter on sourdough toast. This is an easy, quick meal any time of day.

(Note that in the picture, I didn’t have fresh dill, so I used dill I dried myself over the summer. Since there is no water content, I used considerably less by volume than I normally would have.)

There are so many things that food will or won’t do for us. But what are calories and how do we get them to work for us, not against us? You know the drill…

Chestnut Crepe Recipe

Check out this simple crepe recipe I made the other day. It’s just 2 cups chestnut flour, 2 eggs, 1 1/2 cups milk and 2 Tablespoons of melted butter whisked. Let sit for 20 minutes and then pour into a hot non-PFOA, non-stick skillet by the 1/2 cupful to make delicious crepes. The filling here is the same sauteed apples with cream we saw from the other day. Yum!

Day 26 - Are You Getting More Than Me?

With all the emphasis on exercise, it’s easy to forget how important sleep is. Since I was involved in a car accident many years ago, my sleep has suffered. Add a few kids, a move and a lengthy home renovation and it’s clear why I’ve had trouble getting back on track with my nighttime routine. However, I have to tell you that when I’m in the zone and able to implement my energy medicine routine, going to bed early enough so that I’m well-rested. How early is early enough? What are the benefits of being well-rested? Watch the video to find out.

The winter months always make me want soup. It is an ideal food that often gets overlooked in modern society. This soup was inspired by the woman I lived with in Spain some 23 years go. It has a poultry broth base, white cannelini beans, a little onion, spinach and halibut. Señora’s version would have had Swiss chard in lieu of spinach. Nourishing, warming, it’s perfect to end a busy day and slow you down for a good night’s sleep.

I finally decided to show you a little Energy Medicine. I’m not an expert, nor do I hold a certificate in it, but what I have learned has worked wonders for me following that accident I told you about. This video shows you how you can use Energy Medicine to metabolize food this way. Keep in mind that Donna’s diet was not very different from what you’re doing in the Challenge. ???? Check it out.

Donna’s book is full of a ton of information showing tons of techniques that you can implement. She covers just about any health issue you can imagine. Just remember that the techniques here are NOT meant to replace food. Your body still needs the nutrients from your diet in order for the methods to work and stick.

Day 24 - How to Be a Vegetarian on the Challenge

Vegetarians will often wonder how to comply with the Challenge and still remain true to their vegetarianism. Even though the ideal Challenge foods have already been discussed in the previous days, I’ve created this video to more fully explain how to get the proper protein and fat you need to keep your body’s energy humming and systems working optimally. Tonight, we had a nice dessert treat. Sauteed apples with cream. Simply core and slice apples to desired thinness. Melt butter in a frying pan and add apples when warm. Grate a pinch of fresh nutmeg over. Stir and cook until apples are just a bit translucent (or as much as you want, really). Stir to coat apples. No added sugar, just a little vanilla extract in the raw whipped cream. Nutmeg brought out the natural sugar in the apples. Better than pie and done in about 15 minutes.

Day 23 - What can I drink besides water?

If you’ve become accustomed to drinking soda, coffee, tea, wine or juice, you may be thinking that your drinking options are limited. Nothing could be further from the truth. In fact, there are several things you can drink that are compatible with this Challenge as well as extremely delicious. Here are just a few ideas off the top of my head.

One drink I didn’t mention is beet kvass — a drink of Eastern European origin. I drink it fairly frequently throughout the year. Most people tell me that they love it. I wouldn’t say that I necessarily love it, but I do crave it because my body needs it. Beets are excellent for building blood and with my history of anemia, it’s understandable why I crave it from time to time. The recipe I use comes from Sally Fallon and Mary Enig’s book, Nourishing Traditions — a book that EVERYBODY who is interested in good health should have on the shelf. To make a half gallon of beet kvass, you need:

3 medium sized beets

1 teaspoon Celtic sea salt

2 tablespoons of whey (drained from yogurt or milk kefir through a coffee filter) or water kefir

filtered water

Chop beets roughly — not too fine or you will make alcohol! Add other ingredients and water to fill your jar. Let sit at room temperature for 3 days (2 in warm weather). Chill. Give a quick stir before pouring off some of the water for the first time. I use a sprouting lid on the top of my mason jar to hold the beets in the jar as I pour off the kvass. I don’t discard the beets until I am down to my last 1/2 cup of kvass. I pour this off into a clean jar and use it in place of whey to start a new batch. The chopped beets end up in the compost pile

Day 22 - Can you do it? Yes, you can!

It may seem weird, but the Law of Attraction has EVERYTHING to do with food. Yes, I know we talked about this before, but now we’re approaching it from another angle. Humans often reject what is best for them by inventing problems and reasons why they can’t follow through. This is one of the most common objections that I see. It’s also one of the most easily managed obstacles. See how you can rise to the occasion to get what you want in food — and in life. Watch today’s video here:

I’m steadily increasing the amount of starch in my diet. This morning I had about 1/2 cup of oatmeal followed by a little stew left over from dinner (trust me, stew or soup is delicious first thing in the morning). Tonight, I had chili with beans and guacamole. I even had a tablespoon of rice. So far, lots of energy still and haven’t lost any of the other benefits experienced since I started the Challenge.

To make oats easy to digest, I don’t eat them in their raw state like so many people will suggest is best. Instead, I soak them after dinner in a crockpot with water rinsed off of my kefir grains. Before going to bed, I put add some additional water and milk and turn the crock pot on low. The grains will cook all night and will be delicious by morning. Everybody can just feed themselves. The same time spent as pouring a bowl of cold cereal, but so much more satisfying, delicious and nutritious! So easy!

Day 21 - Feeling the Pressure

One of the most challenging parts of the Challenge for some people may be relaying to others what exactly it is that you are doing. Once you explain this, you may meet with all kinds of objections and even insults. Over the years, I’ve had so many clients, subscribers and friends nearly throw in the towel because of the pressure they felt from others. This is precisely why I’ve started this online community so that people can share their experiences with people who understand what they’re going through — a support network when nobody else will support them.

Now that we’ve gotten that out of the way, I apologize for not keeping you more up-to-date with what I’ve been eating. Over the past week, I’ve been adding more seed grains. That would be grains like quinoa and buckwheat. Today, I added barley — a glutenous grain. So far, all is well with both, but I did notice with quinoa especially that I had some difficulty controlling myself. Then again, it was a fairly light dinner for me of wild caught low mercury salmon, quinoa and sautéed spinach.

Speaking of spinach, I took an interesting series of pictures the other day at the local supermarket. It underscores everything we have been discussing throughout this Challenge. Since it’s the off season for many leafy vegetables, I had to buy some frozen veggies to make up the difference. I walked and walked and it was only at the very end of the 3rd aisle, that I found frozen veggies and less than half of those were organic. One entire side of an aisle was dedicated to ice cream and the side of another aisle was all dessert. Still another side and a half were frozen dinners and other not foods. In light of this, do you think that meat and fat are really the culprits in the American diet? Seriously, somebody is eating all this frozen stuff.

Day 20 - The French Paradox....NOT!

’m the first to admit that I love to drink a glass of wine every so often, but I don’t do it because I think that’s how the French stay healthy. I do it because, well, sometimes I just enjoy a glass of wine. But what do the French really eat and how different are their attitudes towards food? This week I went to two get togethers: a French club and a holistic health conference with all American practitioners. I have always known the difference between how Europeans and North Americans eat, but my awareness has been heightened during this Challenge. Day 19 - Are You Drowning in 8 Glasses?

If you don’t drink this as much as is recommended, then there may not be a need for alarm. However, if you have been drinking the recommended amount, you may want to cut back. Moderation is truly key, but if you’re drinking 8 glasses of water, moderation is not even close to what this practice represents. We’ve all heard the hype about what’s good and bad to eat. It’s so easy to fall prey to (even for me) when you hear news report after news report telling you that there is only one type of food to eat. We have been so far removed from our roots for so long, that these claims actually seem true! And as we buy into it, we get sicker and sicker as a society. This video cuts to the heart of all the crap and helps you to make food choices that will ultimately help you to begin eating intuitively, not based upon your cravings.

Day 16 - The Blessing Nobody Wants

It’s a diagnosis that everybody dreads. Most of us choose to live in denial about it or ignore it, often until it is too late to correct. Many others accept it and turn it into a religion — a way of segregating themselves from the rest of society. They set out on a mission to blame our ancestors for eating instinctually. However, this is one of the greatest blessings that we can experience. Instead of living in fear trying to patch up parts of our bodies that are faltering, wouldn’t it be nice to be blessed with an indicator that we should change course and do something we aren’t currently doing so that we can always possess the power to heal ourselves? Day 15 - Are you running for your life?

When you’ve had something banged into your head over and over until you’ve submitted, it’s hard to accept that you may have been steered wrong. Keep in mind that perhaps a few people do thrive on this advice, but I’ve seen too many health complications such as infertility, substance addiction, weight gain and even heart attacks and cancers result from the belief that doing this will miraculously infuse your body with health despite a less than stellar diet. Day 13 - Managing the Not-So-Silent Killer

Today’s video was inspired by a Challenge participant’s question. I decided that it is a condition that more people need to understand better as many doctors are unaware of just how the disease develops. This information will be of tremendous value to pregnant women as not addressing this will lead to a high birth weight baby which will often manifests as autism, ADD and ADHD. Children currently suffering from these disorders will benefit by following the recommended eating protocol.

I’ve been gradually adding more carbohydrate back to my diet. Sweet potatoes with the duck last night went down well, but I think that regular potato will take a while. I’ll give it another week before trying it again. It’s funny that at the beginning, eating this way seems like it’ll  be boring — a testament to how much sugar we actually consume in various forms. But as the days pass, the mind starts drawing on old recipes that you mom, grandma or even great grandma would’ve made. Tonight, we had corned beef and cabbage. I forgot how delicious it is, but now I need to go find another brisket to make it again!

Day 14 - Your Guru Takes It, So Why Don't You?

I regularly use virgin coconut oil in my cooking and as a supplement. I also use cod liver oil. For some years, I have a love-hate relationship with fermented cod liver oil because my vitamin D levels plummeted at one point while I was taking it even though it is supposed to be much higher in vitamin D than regular cod liver oil. It is unclear if this has to do with the cod liver oil preparation itself or a reaction to stress from a car accident which made it difficult for me to metabolize a lot of foods for some time. Of course, the corner of the planet where I live gets very little sunlight year round, which could have EVERYTHING to do with this as well. However, I still prefer it to other brands because it is the only one I know of that assures it is 100% derived from cod livers versus other brands which are reputed to be a melange of various vegetable oils and synthetic vitamins.
