The winter months always make me want soup. It is an ideal food that often gets overlooked in modern society. This soup was inspired by the woman I lived with in Spain some 23 years go. It has a poultry broth base, white cannelini beans, a little onion, spinach and halibut. Señora’s version would have had Swiss chard in lieu of spinach.
